01 Overview

Malic acid delivers a smoother, longer-lasting sourness than citric acid and reinforces fruit flavours, particularly apple, cherry and berry. It is also used to mask the aftertaste of high-intensity sweeteners, which makes it a standard component of sugar-free formulation.
