01 Overview

Citric acid is the highest-volume acidulant in food and beverage manufacturing, used to control pH, sharpen flavour, chelate metal ions and extend shelf life. The choice between anhydrous and monohydrate is determined by the moisture behaviour of the formulation, and the two are not interchangeable in moisture-sensitive dry blends.
